With a shape resembling that of a cauliflower, Brocollis have clusters of small, tight flower heads. These heads turn bright green on cooking and tastes slightly bitter. Consume fresh broccoli as soon as you can as it will not keep for long. To store, drizzle water droplets on the flower heads, cover loosely in damp paper towels and refrigerate. But never wash broccoli before storing in the refrigerator. The excess moisture promotes mold. Do not store broccoli in a sealed container or plastic bag. Raw broccolis requires air circulation.
